When it comes to international standards of fine dining, or simply excellent meals in general, the Michelin Star guide is one of the most used references around the globe. The same is true for Singapore. Being crazy about good food, we love to get in line for almost any new restaurant. If there’s a buzz, we will be there (no matter if it’s good or not).
The Michelin Star guide gives us a somewhat more trustworthy ground to base our food choices on. The stars help us to distinguish quality in the ever growing food jungle of Singapore. While we enjoy the benefits of the system, many chefs wonder ‘how does one get a Michelin Star in Singapore?’
The little red dot has always been a culinary hotspot in the region, attracting many Michelin Star chefs and their celebrity restaurants. Interestingly though, Singapore does not have its own Michelin Red Guide – perhaps because no one uses road maps in Singapore. (If you didn’t know – the Michelin Red Guide used to be a simple road map). Other cities, such as Tokyo, New York, Paris and London, all have their very own guide already.

Hawker Michelin Star?
There is no need for a posh setting with fancy tableware and classy ambience. Although the guide gives information about the interior of restaurants, it really isn’t a criteria for the Michelin Stars. In total there are 4 factors for restaurants to be awarded with a Michelin Star

2. Mastery of technique used for cooking
3. Personality of the food
4. Consistency of the food

In the past, there was even a small food stall in Tokyo, Japan that was awarded with a Michelin Star. The curious fact about it was that the food stall was in a parking garage and far away (literally and metaphorically) from any fine dining restaurant in the city. Why shouldn’t there be a Hawker stall in Singapore that gets a Michelin Star?
What the Stars Mean
The stars are not only awarded to restaurants, but also to chefs. In total there are three stars to be won. But one doesn’t get to keep them forever. One has to continuously provide the very same quality. It isn’t uncommon that restaurants or chefs loose a star.
The system of three stars was created for the very first time in 1936. Restaurants and other eateries across the world have been judge since to these criteria:
1. One star for a very good restaurant in its category.
2. Two stars for a restaurant with excellent cooking and worth a detour.
3. Three stars for outstanding cooking and worth a trip solely for the food.
